Big... big... cupcakes for Little Rascal & Frenz

My sis dotes on her lil rascal so much that she asked me to bake him and his pre-school classmates bigger cupcakes for his b'dae. She tried, liked and wanted the white choc cup cakes, which I baked for the Piggies' gathering previously.
And for the lil rascal, I went to Phoon Huat and got bigger cupcakes liners.




These colourful cupcake liners are from Wilton.



They're so cute, and I can't bear to use the rest of them!



The batter ready to be baked.



I filled slightly more than half (maybe around 2/3) of the cupcake liners.



I had run out of white choc chips, so I mixed the dark and white together.



I stirred them in with a toothpick, to prevent them from sinking to the bottom.



My trial samples. I used ordinary and smaller cupcake liners as I couldn't bear to waste any of those pretty ones.



Now for the real stuff.



They gave a sunny and tan finish on the top, just rite for the lil rascal!





The next evening...


I ordered the cupcake courier on Amazon.com. It excited me to use it for the 1st time, especially when a need arrived just in time!





Blue's my favourite colour, but I chose the bright cheerful yellow.

A total of 24 cupcakes with choc buttercream and sprinkled with colourful teddy bears.

My 1st Cupcake Sale

Piggy Gerry has ordered choc chip cupcakes for her colleague's birthday from me. That's my 1st sale, and I want to do the best. After much thought, I decided on Mint Choc Cupcakes of 500 Cupcakes and Muffins. But Piggy Gerry isn't keen on the mint, so I did w/o it.




Beat the butter and sugar 1st before adding the eggs.



Adding the flours, including the cocoa powder. After which, I dropped in the vanilla instead of mint essence and stirred in the choc chips.



Bake at preheated oven at 160 Deg C for 20mins.

But as usual, it took a longer time to bake the cupcakes.





The cupcakes turned out flat, similar to the ones shown in the book.



I followed the mint choc cupcakes' icing except for the mint essence and also added pink instead of green food colouring. It's for a gal, so they must be sweet looking of course!



I just bought a new piping tip. A great opportunity to put to use on the b'dae cupcakes.



Oooohhh... the deadly PINK buttercream.



Piggy Gerry also requested that I piped 'S' as the B'dae Gal's initial.

Unfortunately, my skill has yet make its mark.



I hope they would enjoy these at dinner the following night. Kinda worry alittle... of the comments that her colleagues will make [v_v]"

White Choc & Macadamia Nut Cupcakes

I took the recipe off 500 Cupcakes and Muffins for my Piggy Gang gathering, with addition of Lil' Braddy.


I omitted macadamia nut since I didn't have any nut at all at the time. It was an impromptu decision for this cupcake as you can guess.

Yes, the white choc chips were the last to stir into the batter.

The 1st tray appeared to have the cakes shrunk from the sides.



For the second batch, I adjusted the heat and let the cupcakes cooked under a slower heat and longer time.

I realised this after a few faults with the outcomes of the previous cupcakes.



What a great difference!

Triple Vanilla Cupcakes for ST

ST is a new colleague of mine, and her b'dae was coming up on 5th Oct. She's extremely sweet tooth, as proven by Ms Yap's deadly choc cupcakes previously. Her favourite is vanilla, and what a great relief to me!

I decided to do a triple vanilla for her, from top to bottom.


I baked some vanilla cupcakes, a recipe I took from 500 Cupcakes and Muffins.





I bought 2 cones of vanilla ice-cream as filling for the cupcakes.



I scooped the vanilla ice-cream from the cones.



And added a touch of cherry filling as well.



Lastly, a vanilla buttercream by Chockylit.



I piped buttercream on the cupcakes in various styles.



I had some lime cookies from my last bake.



The lemon icing from Nigella's was tinted pink.



And I used a toothpick to 'write' her initials on the cookies.





Tadaa... the final piece of art!
